Water-soluble dietary fiber (WSDF) and water-insoluble dietary fiber (WIDF) from barley were evaluated for their scavenging capacity for heavy metals, Hg, Cd, and Pb. WSDF or WIDF were affected to sorption degrees of heavy metal ions at pH 2.0 and 7.0 under high (1.0,000 mumol/L) or low (500 mumol/L) metal ion concentrations, respectively. WSDF had a higher sorption degree (57%) with Pb than Hg and Cd ions regardless of ion concentrations. The sorption degree, based on binding capacity of heavy metal ions, was not significantly affected by pH. Barley WSDF showed 82.5% mutagenic inhibition.
